Custard Powder Ice Cream

Custard Powder Ice Cream Ice cream at home?? Yes!! you can prepare with things which are easily available at home itself. .

        My Mother- In-Law prepares this Ice cream at home and my husband loves this Ice Cream very much. When ever we visit our native, she used to prepare a box full of Ice-cream for him. He would finish everything without even asking others. Learnt this easy and tasty recipe from her.. A must try recipe.. Here the recipe follows..

Preparation Time : 45 minutes


Ingredients:


Full Cream Milk             - 1 liter
Brown Sugar                   - 5 tbsp
Custard Powder              - 2 tbsp
Vanilla Essence             - 2 tsp

Procedure:



  • Boil Milk. After the milk boils, reduce the flame to low and cook the milk.
  • When the milk reduces to half, take 5 tbsp of milk alone in a bowl and Let it cool.
  • Add Brown sugar to boiling milk. I have used Brown sugar. If you can't find it, you can also use ordinary white sugar. Stir milk well. All sugar will get dissolved in some time.
  •  Add custard powder to the milk which we have taken in a bowl already and mix well so that no lumps are formed.
  • Now add custard powder mixed milk in the bowl to boiling milk and mix well.
  • Switch off the flame in another 3 minutes. You can see the Milk has gained ice-cream consistency by now.
  • Let the mixture cool. After it has cooled, blend it in a Blender for a while and store in Freezer.
  • Enjoy your Ice-Cream after it is completely frozen.,

How to prepare whipping cream from Amul Fresh cream


Amul Fresh cream                      - 600 ml

Place fresh cream in upright position in fridge for 4 - 6 hours. Also keep the vessel in which you are going to whip and beater  hook in fridge for 4 - 6 hours. Don't freeze fresh cream. Just keep in Fridge. For the cream to whip everything should be cool. After 6 hrs open fresh cream pack. You can see solid part of fresh cream floating in the top. Just remove it without disturbing the liquid part. Keep the vessel in which you are going to whip the cream in a pot of ice and start whisking the cream. Add 4-5 tbsp of sugar in middle. Keep on whisking till the whipping cream reaches its consistency. Whipping cream shouldn't fall down from the spoon in which you are taking it out. That is the consistency.

Madurai Special Jigarthanda

Madurai Special Jigarthanda As our home town is nearer to Madurai, Jigarthanda has become one of my favorites from my childhood. Our visit to Madurai always ends with Jigathanda.. This is the true and original recipe as i have seen myself how they prepare Jigarthanda many times..

Two important things play a major role in this Jigarthanda..
                                    1. Badam Pisin (or) Almond Gum which is available in many stores.
                                    2. Paal Icecream (or) Custard powder Icecream which is prepared by using only milk and custard powdr. The real taste of Jigarthanda lies with this Ice cream. I have posted this recipe some days before. You can check  by clicking the link..

Recipe For : 4


Preparation Time : 10 minutes + soaking time 12 hrs.


Ingredients:


Badam Pisin         - 1 tsp (Almond Gum)
Milk                      - 4cups
Paal Icecream       - 4 scoops
Nannari Sarbath    - 1 tbsp

 Procedure:



  • Wash and soak Badam pisin in enough water overnight. You will need 1/3 cup of water for soaking. After soaking, Badam Pisin  will increase in its quantity. So adding 1 tsp of Badam Pisin itself very enough for 4 persons. 




  •  This is that Badam Pisin before soaking. After 12 hours you can see that it has increased in quantity and it looks like sago. Remove Brown color impurities. Filter if there is any excess water. Gently smash Badam Pisin so that it doesn't stick to each other.
  • Boil milk. After the milk has boiled take half of the milk in a bowl and let it cool. Boil the remaining milk in low flame till it reduces to half.
  • Nannari Sarbath is also available at all the stores.  You have to use it as such without adding water.
  • Now we have everything we need for Jigathanda.
  • Take a Glass in which you are going to serve. Add 2 tsp of Badam pisin to it first, followed by Ice cream. Then milk reduced to half, after that Boiled milk and top everything with  Nannari sarbath. Mix everything well. Top with Nannari Syrup and enjoy your Jigarthanda.
  • Sugar which was in ice cream itself was okay for us. If you wish, you can add some more sugar while boiling milk.

I found this cake on a website. Was waiting for a long time to prepare this. Since its Valentine's day special prepared it in heart shape. I had only round pan, so Prepared the round cake first, then cut it in heart shape. .Used remaining crumbs over frosting. Have also included how to transfer round cake to a Heart cake.

Specialty of the cake is that red color and the texture because of Butter Milk. Just add correct quantity of  ingredients. That would be fine.

Ingredients:


Dry Ingredients:

All Purpose Flour ( Maida)                                - 1 cup
Powdered Sugar                                                  - ¾ cup
Cocoa Powder                                                    -  Little less than ½ tbsp
Baking Soda                                                       - a pinch
Salt                                                                     - a pinch

Wet Ingredients:


Butter                                                                  - Little less than 1/3 cup
Butter Milk                                                         - Little less than 1/3 cup
Egg                                                                      -1
Vannila Essence                                                  - Little less than ½ tsp
Vinegar                                                                - Little less than ½ tbsp
Red Food Color                                                   - ¾ tbsp


For Frosting:

Cream Cheese                                                     - 200 gm
Butter                                                                  - Little less than 1/2 cup
Powdered sugar                                                  - 2 cups

Things Needed:

  • Hand Blender
  • Electric Oven
  • Cake Pan

Procedure:



For Sponge:

  1. Sieve well maida, cocoa powder, salt n baking soda.
  2. Mix cocoa powder and red color. Mix well so that there is no lumps. This is done for even distribution of red color in cake. keep it aside ( picture 1)
  3. Beat butter in a deep pan. once it gets fluffy add sugar.
  4. Beat in a egg.
  5. Add vannila extract
  6. To the above, add dry ingredients which we have sieved before in small quantities.
  7. Add butter milk and Vinegar.  Beat it well. The batter will be thick only.. 
  8. Grease the cake  pan.
  9. Pour the batter and bake in the preheated convection oven for 180 degree celsius.. ( picture 2)
  10. .Bake for 15 - 20 minutes  Insert a toothpick in the cake. If it comes out clearly (i.e no wet pieces of cake should come with it) , you can take the cake from oven.. Let it cool ( picture 3)
  11. If you have heart shaped cake mould. then no problem. or else follow the link here
  12. Place the cake in a plate. Cut the cake into layers horizontally. Rotating the plate while cutting helps in correct partitioning of cake.

For Frosting:

  1. Beat cream cheese, butter and sugar together.
  2. Keep the vessel in which you are going to whip the cream in a pot of ice and start whisking the cream.
  3.  Keep on whisking till the whipping cream reaches its consistency. Whipping cream shouldn't fall down from the spoon in which you are taking it out. That is the consistency.

Assembling:


  1. Take a plate in which you are going to serve cake. Add whipping cream to the center. Place the bottom sponge layer to it. This is done to prevent the cake from moving
  2.  Spread a  ½ inch layer of  whipping cream to it.  ( picture 4)
  3. Now the next layer, keep it upside down and then spread another  big dollop of  cream and then spread it on top as well on sides. Then make it smooth! ( picture 5)
  4. Now sprinkle the crumbs from the left over cake. ( picture 6)
  5. Refrigerate for some time.
  6. Cake is ready to serve

    This is one of the perfect cakes for celebration. I have already posted on Lemon Chiffon Cake.. I used lemon butter cream frosting for this cake.  Here goes the recipe..

    Ingredients:

    Butter                       - 1 cup
    Lemon Zest              - 2 tbsp (Grated Lemon Peel)
    Powdered Sugar       - 3.5 cups
    Lemon Juice             - 3 tbsp 
    Cold Milk                 - 2 tbsp (Optional)

    Procedure:

    •  keep the vessel in which you are going to prepare frosting and beater  hook in fridge for 4 - 6 hours.
    • Keep the vessel in which you are going to whip the cream in a pot of ice and start the procedure.

    • Whisk butter and lemon zest together.
    • When its fluffy, add powdered sugar and lemon juice.
    • Whisk it well , till it reaches free flowing consistency.
    • If the frosting is too thick, add in 2 tbsp of cold milk or more. Adding milk is purely optional. Frosting should be easily spreadable. If the frosting is too thin, it won't stay on cakes. So be careful, while adding milk.
    • Take the Lemon Chiffon Cake in a plate. Cut the cake into two layers horizontally. Rotating the plate while cutting helps in correct partitioning of cake.
    • Take a plate in which you are going to serve cake. Add frosting to the center. Place the bottom sponge layer to it. This is done to prevent the cake from moving
    • Spread a good ½ inch layer of  frosting to it.

    • Now the second layer, keep it upside down .Take a big dollop of  frosting and then spread it on top as well on sides. Then make it smooth! If crumbs are seen, do a crumb coat.

    • Decorate as you wish.. I have added Rice Krispies..

    • Keep the cake in Refrigerator. Serve the cake after the frosting has settled completely.

    Ingredients:

    Dry Ingredients:

    Maida ( All purpose flour)           - 1 cup
    Cocoa Powder                              - 1 cup
    Baking Powder                             - 1 tsp
    Baking Soda                                 - 1/2 tsp
    Salt                                               - a pinch

    Wet Ingredients:

    Butter                                           - 1/2 cup
    Condensed milk                           - 10 OZ
    Yoghurt ( Sour Cream)                - 2 tbsp
    Vannila extract                             - 1/2 tsp
    Coffee powder                             - 1 tbsp
    Hot water                                     - 1/2 cup
    Chopped Nuts                              - 1/2 cup

    Things Needed:

    1.Convection Oven.
    2.Cake Blender
    3.Baking Pan


    Method:


    1. Sieve well maida, cocoa powder, baking powder n baking soda
    2. Beat butter in a deep pan. once it gets fluffy add condensed milk.
    3. Once both get blended add yoghurt
    4. After some time add oil and keep on beating
    5. Add vannila extract
    6. To the above, add dry ingredients which we have sieved before in small quantities.
    7. Add little hot water to coffee powder and mix it with the batter
    7. Atlast add hot water. First add 1/4 th cup of water . The batter should be in dropping consistency. It should be like dosa batter and not as idli batter. so add remaining water as needed..
    8. Grease the pan.
    9. Pour the batter and bake in the preheated convection oven for 170 degree celsius..
    10.Bake for 15 - 20 minutes  Insert a toothpick in the brownie. If it comes out clearly (ie no wet pieces of brownie should come with it) , you can take the muffin from oven.. Allow it to rest for some time and enjoy your freshly baked brownies..
    11. Serve the Brownies topped with chopped nuts..


    Quick Tip

    Brownies taste better with ice cream.. So top the brownie with ice cream and add some Chocolate Syrup.  enjoy the best dessert in the world..

    Chocolate Syrup

    This is used mainly for Decorating cakes, ice cream and desserts.. Its very easy to prepare. so we can easily prepare when we need instead of stocking such big bottle..

    Ingredients:


    Unsweetened Cocoa Powder              - 1 cup
    Sugar                                                   - 2 cups
    Salt                                                      - 1/4 tsp
    Vannila essence                                   - l/2 tsp

    Things Needed:

    Blender

    Procedure:


    1. Add all the ingredients and blend.
    2. When once everything get mixed up well add 2 cups of cold water and blend.
    3. Transfer the contents to  a pan and bring it to boil in medium flame.
    4. Keep on stirring for 3 minutes.
    5. Switch off the flame after 3 minutes.
    6. Allow it to cool.
    7. Add vannila essence when it cools completely.
    8. Store in a dry airtight bottle.
    9. Keep in fridge. . use when ever required..

    Birthday Celebration

    Birthday Celebration Its a special day for us; our kid turned five today. We hosted a small party at home to celebrate his birthday. We invited around 20 of our friends and their kids. Really felt happy to cook for my beloved friends. Today's post is all about the party menu and the best part is all the recipes are already in blog.. Check it out!!

    White Forest Cake  - I had given recipe for 1 cup of flour whereas i prepared with 4 cups of flour.

    Pulkha Roti        - Want to know how to prepare soft chapathi?? Click the link.. These rotis stayed very soft throughout the party

    Navarathna Kuruma       -  Very healthy and best  vegetarian side dish for chapathi/ Roti

    Mee Goreng        - This is Malaysian style  noodles.  It literally means fried noodles. One of the easiest and tastiest noodles.

    Vegetable Dum Briyani   -  Vegetables are cooked with spices and masala. Rice is cooked separately. Then both are put 'Dum' together. I served it with Onion Raita

    Malligai Poo Idli          - This Idli was the Show stopper. Everyone appreciated the softness of this Idli.. It was really soft.. Most of them asked for the recipe and tried it too.

    Varuthu Aracha Sambar     - Very much flavorful sambar which is prepared with freshly roasted and ground spices.

    Coconut Chutney       - Chutney prepared with coconut and fried gram

    Curd Rice            - A trick for preparing curd rice. Add lot of milk and just few drops of curd.

    Ice cream with Fruit Salad  - I added cut fruits like apple, banana, grapes and pineapple to homemade Icecream
