My kid loves Idiyappam a lot. But i hesitate to prepare Rice flour Idiyappam often because of monotony of rice. He is already having rice for lunch, then why to add rice in Breakfast also.. 

Heard about this wheat flour Idiyappam once. Tried it and my kid was very happy.. He loved its taste.  And the taste was really awesome just like Rice Flour Idiyappam.

Idiyappam is very easy to prepare.. You will need only 15 minutes. Give a try to this Healthy wheat flour Idiyappam once..

Ingredients: (Makes 10 Idiyappam)


Wheat Flour      - 1 cup 
Salt                    - As required
Water                - As required

Procedure:

  • Dry roast wheat flour in a pan. When it leaves a nice aroma,take out , add salt and enough water. Bind the flour into a dough like Chapathi dough.
  • Take a muruku press with Idiyappam holes plate. Add dough to the press and Start pressing the dough. 
  • If the idiyappam strings are breaking, it means dough needs some water. So add water to the dough and bind again.
  • If the idiyappam strings are not coming in perfect shape, it means more water has been added to the dough. So add some more flour and bind again.
  • Press it on Greased Idli plates..
  • Steam it for about 10 minutes.
  • Serve it hot with Coconut Milk..

Idiyappam Today's recipe is specially for kitchen beginners, Basic Idiyappam recipe. Softness and taste of Idiyappam depends only on the rice flour which we are using. Click this for Idiyappam flour preparation, How to prepare Idiyappam flour?.

You can prepare healthy, tasty Idiyappam in less than 20 minutes. The recipe follows..

Yields : Around 8 Idiyappam

Preparation Time : 20 minutes

Ingredients:


Rice Flour          - 1 cup
Salt                    - As required
Water                 - As required

Procedure:

  • Take rice flour in a bowl. Boil 3/4th cup of water in a pan. Add needed salt for flour to it. When the water is hot, add it to the flour and mix it with a ladle. After it has cooled down, bind it to a soft dough with your hands. Add water while kneading if needed. 
  • Take a muruku press with Idiyappam holes plate. Add dough to the press and Start pressing the dough.

Masala Idiyappam Another healthy, tasty alternative to Instant Noodles. Masala Idiyappam... You can prepare Idiyappam in just 15 minutes. And spend some 10 more minutes for preparing this Masala Idiyappam. You will get healthy and tasty Noodles!!!  I have used Brown Rice flour for preparing Idiyappam!!! Hence double healthy!!!

Preparation Time : 30 minutes


Recipe For : 1


Ingredients:

Idiyappam                    - 2
Carrot                           - 1/2
French Beans               - 4 to 6
Fresh Peas                    - a handful
Big Onion                    - 1 (small size)
Garlic Pods                  - 3
Salt                              - As required
Turmeric Powder        - 1/4 tsp
Sambar Powdr            - 1 tsp
Garam Masala            - 1/2 tsp
Mustard Seeds            - 1/4 tsp
Curry Leaves              - few
Oil                               - 1 tbsp


Procedure:

  • Break Idiyappam into small pieces. Chop Finely Big Onion, Garlic, Carrot and French Beans. Cook Fresh peas.
  • Heat oil in a pan. Add mustard seeds. When they splutter add Chopped Onions , Garlic and curry leaves.
  • After they turn translucent, add chopped Carrot, French Beans and cooked Peas. Cover the pan with a lid and let the vegetables cook in its own moisture.
  • When the vegetables are done 3/4 th add salt, Turmeric powder and Sambar powder. 
  • Saute well and then add Idiyappam. Mix everything well and cook for five more minutes.
  • Switch off the flame and then add Garam Masala Powder.
  • Serve it hot!!!

Ingredients: (Recipe For 1)

Wheat Idiyappam              - 2
Egg                                    - 1
Big Onion                          - 1
Tomato                              - 1
Capsicum                          - 1 (very small)
Salt                                    - As required
Turmeric Powder              - 1/4 tsp
Chilli Powder                    - 1/2 tsp
Garam Masala Powder      - 1/2 tsp
Curry Leaves                     - few
Oil                                      - As required


Procedure: 

  • Break the Idiyappam into smaller pieces. Chop finely onion, capsicum and tomato.
  • Heat oil in  a pan. Add onions and curry leaves. When they are translucent, add a egg.
  • Saute it well. After the egg is roasted, add capsicum.
  • After some time add tomatoes.  Add salt, turmeric powder and chilli powder after the tomato is cooked.
  • When everything gets mixed up, add Idiyappam.  Mix them well so that masala sticks on to  all Idiyappam.
  • Add garam masala powder and switch off the flame..
  • Serve it hot.. Your Instant, tasty and healthy Breakfast is ready!!

Ingredients:

Idiyappam                    - 2
Button Mushroom        - 3 to 5
Small Onions                - 6 to 8
Salt                                - As required
Turmeric Powder          - a pinch
Chili Powder                 - 1/2 tsp
Cumin Powder              - 1/4 tsp
Curry Leaves                - few
Oil                                 - 2 tbsp

Procedure:


  • Chop small onions finely. Chop Button mushroom into vertical slices. Break Idiyappam into smaller pieces.
  • Heat oil in a pan. Add chopped onions and curry leaves to it. Saute till they turn translucent, and then add chopped mushroom. Add also salt, turmeric powder, chili powder and cumin powder. Adjust spice according to your taste.
  • After mushroom is cooked, add idiyappam and toss everything together. Switch off the flame after 2 minutes.
  • Your tasty and healthy Mushroom Idiyappam sevai is ready to enjoy..

Preparation Time : 20 minutes


Ingredients:


Whole Garam Masala    - Each 2
Carrot                               - 1 (medium size)
Potato                              - 1 (medium size)
French Beans                 - 8 to 10
Peas                                 - a handful
Big Onion                        - 1
Tomato                            - 1
Yogurt                              - 1/4 cup
Salt                                   - As required
Turmeric Powder            - 1/4 tsp
Chili Powder                    - 1 tsp
Coriander Powder           - 1 tsp
Garam Masala Powder   - 1/2 tsp
Kasuri Methi                     - 2 tsp (Dry Fenugreek Leaves)
Oil                                      - 2 tbsp
Coriander Leaves            - for garnishing

To Grind:

Chopped Coconut      - 1/4 cup
Chopped Ginger         - 1 tsp
Chopped Garlic          - 1 tsp
Green Chili                  - 2


Procedure:

  • Chop all the vegetables into little bigger pieces. Chop finely Big onion and tomato.
  • Cook Fresh peas. Grind everything under 'To Grind'.
  • Heat oil in a cooker. Add whole Garam Masala. Whole Garam Masala includes cinnamon stick, bay leaf, cloves and star aniseed.
  • After a second, add chopped onions.
  • After they turn translucent, add chopped carrot, potato, french beans and Peas. 
  • Saute them for a minute and then add chopped tomato.
  • After tomato is cooked completely add masala, enough salt, turmeric powder , chili powder and coriander powder.
  • Saute till raw flavor goes off and after that add yogurt and kasuri methi.
  • Add enough water and cook it for a whistle.
  • When the pressure subsides, open the cooker and add Garam Masala Powder. Garnish with coriander leaves.
  • Enjoy with Idiyappam or Aapam

Lemon Sevai How many sevai lovers there?? Sevai is an easy snack/breakfast dish which is prepared with left over Idiyappam. Its very easy to prepare too.  When ever i prepare Idiyappam for breakfast, I will prepare few extra, so that we can have it as Sevai later.  One such sevai is Lemon Sevai and its recipe follows..

Recipe For : 1

Preparation Time : 15 minutes

Ingredients:

Idiyappam           - 2
Lemon                 - 1/2
Mustard Seeds     - 1/4 tsp
Urad Dal              - 1/4 tsp
Channa Dal          - 1/4 tsp
Peanut                  - 1 tsp
Dry Red Chili       - 1
Curry Leaves        - few
Salt                        - As required
Tumeric Powder    - 1/4 tsp
Oil                          - 1 tbsp

Procedure:


  • Break Idiyappam into pieces. Extract juice from lemon. Add lemon juice and salt to broken Idiyappam pieces and mix it well.
  • Heat oil in a pan. Add mustard seeds, urad dal, channa dal and peanuts to it.
  • When they splutter add dry red chili and curry leaves to it. Add also turmeric powder.
  • Now add broken idiyappam pieces to the pan and mix it well. Saute for 2 minutes and then switch off the flame.
  • Your Lemon sevai is ready!!

Kozhukattai rice flour is different from that of Muruku, seedai rice flour. This post gives an insight on two types of rice flour. You can easily prepare both rice flours at home, where ever you are and what ever your weather is!!

For preparing rice flour for Idiyappam/Kozhukattai, etc:

  • Soak Raw Rice (Pacharisi) in enough water for 10 minutes. 
  • Drain excess water and hang it in a Muslin cloth for 1 to 2 hours. This is done to absorb excess water from rice.
  • Grind it to a powder. You can use even Mixer-Grinder to grind the rice. 
  • Sieve the flour well.
  • Place the flour in a cloth,close it and steam it in a Idli -plate for 10 minutes.
  • Let the flour cool in shades and use accordingly.
Foods taste ultimate, when all the ingredients are homemade.. Start preparing Rice flour for  preparing authentic, hygienic and tasty Kozhukattai..

Paal kozhukattai

Looking for an  afterschool snack which is healthy as well as filling for kids?? Here you go!! 

This is the way my ayamma prepares Paal kozhukattai . It had been my favourite snack then and now this is my kid's favourite too. You can prepare this easily.

By this way of preparing kozhukattai, it will stay soft for a longer time too 

The taste of milk with rice flour will be awesome. Try this and you will surely love it . The recipe follows.. 

Ingredients:

For kozhukattai dough:

Kozhukattai flour   - 1 cup
Water                        - 3/4 cup
Milk                           - 1/4 cup
Salt                             - 1/2 TSP
Gingely oil                - 1 TSP

For making Paal kozhukattai:

Sugar                          - 1/4 cup
Water                         - 2 cups
Milk                            - 1 cup
Grated coconut         - 1 tbsp



Procedure:


You can use either kozhukattai flour or Idiyappam flour which is available in shops for this recipe. If you want to make kozhukattai/Idiyappam flour at home, you can check  Here!!

Take a pan. Add 3/4 cup water , 1/4 cup milk, salt and gingely oil to it. Boil it for some time. When it starts boiling, lower the flame and gradually add  1 cup of flour with continuous stirring .

switch off the flame when all the flour gets mixed. Cover it with  a plate and let the dough cool.

When the dough has cooled down a Little, combine it together and knead  well. Make small balls out of it.

Heat a heavy bottomed pan.  Add 2 cups of water to it. When the water starts boiling, add kozhukattai balls to it

Cook the kozhukattai balls in lower flame .Keep on stirring in between to prevent it from getting burnt.

When the kozhukattai balls are half cooked add sugar to it. These kozhukattai balls will get cooked soon within ten to fifteen minutes . After it has been cooked completely, add 1 cup of boiled milk to it. Let everything boil together for two more minutes.

Switch off the flame and add grated coconut to it .Serve the Paal kozhukattai hot..

Notes:


You can also use same amount of jaggery instead of sugar. If you are using Jaggery, boil jaggery  in 2 tbsp water, filter it and use accordingly.

You can also use cardamom powder along with geared coconut.

Adjust the milk you add at last according to the consistency you need.

In Diet?? Not preparing  Aapam because of high fat coconut milk?? This recipe will serve as the alternative side dish for gravy..

 Black channa is low in fat, high in dietary fiber and rich in vitamins and minerals.. You will get nutrients of 5 portions of fruits and vegetables in just  1 portion of black channa..Thus its a healthy addition to our diet..

I tried preparing this recipe in fish kulambu style.. It was awesome... You can feel like as if you are eating fish kulambu only..

Here comes the recipe!!

Ingredients: (Recipe For 1)

Boiled Black Channa          - 1/4 cup
Small Onions                      - 8
Chopped Coconut              - 2 tbsp
Red Chilly                          - 2
Cumin Seeds                      - 1 tsp
Tamarind                            - 1 tbsp
Turmeric Powder                - a pinch
Salt                                     - As required
Oil                                      - As required

Procedure:

  • Soak Black Channa overnight or soak it in hot water for 3-4 hours.. Boil it well. Extract tamarind juice from tamarind.
  • Heat oil in  a pan.. saute red chilly and cumin seeds.. After a second add small onions..
  • Saute till onions become translucent.. Grind along with coconut..
  • Heat oil in  the same pan.. Add onion-coconut paste.. Saute till the raw smell goes off.. Add tamarind extract, salt and turmeric powder.
  • Add enough water to the gravy and add boiled channa.
  • Cook the gravy until it thickens in low flame.
  • Serve with chapthi, roti , aapam or Idiyappam.. I served it with Aapam..

 Vegetable Stew!!! An aromatic vegetable gravy cooked in Coconut oil and Coconut milk. It tastes so good with Aapam and Idiyappam..
Here goes the extra-ordinary side dish recipe for aapam..

Ingredients: (Recipe For 2)

Carrot                       - 1 (small size)
Potato                       - 1 (small size)
Fresh Peas                - a handful
Big Onion                 - 1
Chopped Ginger       - 1 tsp
Chopped Garlic        - 1 tsp
Green Chilli              - 1
Chopped Coconut     - 1/4 cup
Curry Leaves            - few
Coconut Oil              - As required
Salt                            - As required

To Powder:

Cinnamon Stick     - 1
Cardamom             - 1
Cloves                    - 2
Black Pepper         - 1/2 tsp

Procedure:

  • Chop carrot and potato into little bigger pieces. Cook carrot, potato and peas together.
  • Finely chop Big onion lengthwise. Slit green chilli.
  • Extract coconut milk from coconut. You can view Here about extracting coconut milk from coconut.
  • Powder everything under 'To Powder'.
  • Heat Coconut oil in  a pan. Add ground powder.
  • After a second add chopped Ginger, Garlic and slitted green chilli.
  • Saute for  a minute and then add chopped onions and curry leaves.
  • After the onions are translucent, add cooked vegetables and coconut milk.
  • Use both thick and thin coconut milk.
  • Add enough water and salt. 
  • Cook the gravy in medium flame for another 5 minutes and serve it with dish of your choice.
  • I am serving it with Aapam.

Recipe For : 2

Preparation Time : 30 minutes + Soaking time for chickpeas

Ingredients:


Black Chickpeas            - 1/4 cup (Karupu Kondakadalai)
Salt                                 - As required
Turmeric Powder           - 1/4 tsp
Chili Powder                  - 1 tsp
Coriander Powder          - 1 tsp
Garam Masala Powder   - 1/2 tsp
Coconut Oil                    - 2 tsp

To Saute in Coconut Oil and Grind:

Small Onion                   - 6 to 8
Chopped Ginger             - 2 tsp
Chopped Garlic              - 2 tsp
Grated Coconut              - 1/4 cup

Procedure:


  • Soak Black Chickpeas in enough water overnight or soak in hot water for 3 hours. After that cook it well using a pressure cooker. Chop small onion into two.
  • Heat half coconut oil in a pan. Add chopped onions, ginger and garlic to it. Saute it till they turn translucent and after that add grated coconut. Switch off the flame after coconut start changing color. Grind everything together after it cools off.
  • Heat remaining coconut oil in the same pan. Add ground masala  to it. Add also salt, turmeric powder, chili powder and coriander powder to it. Saute till raw flavor of masala goes off. 
  • After that add cooked chickpeas along with its water to the pan. Add also some more water if needed.
  • Cook the gravy till it reaches needed consistency. Switch off the flame and add Garam Masala Powder. 
  • Enjoy this mild spicy kadalai curry with Puttu, Aapam or Idiyappam of your choice.

' Panguni Pongal' festival is celebrated today at our native Virudhunagar. This festival is celebrated towards Goddess Mariamman on the month of Panguni (April) every year.

 A special occasion for foodies in this pongal is Aaki Vaithal.. After 21 days of fasting, on the night of pongal people who have venduthal will do this at home. Its nothing but, people who have 'venduthal' have to prepare special dishes as an offering to goddess. 

There are people in our native who used to do this 'Aaki Vaithal' for generations together. My Ayamma (Grand Mother) is one among them. She has been doing since ages. She was telling that As for as she knows, aaki vaithal has been done at our home from her Mother -in-law's Grand mother time.. . And the procedure has been inherited through generations. She has been following the very same old procedure.. 

Very happy that me, who is in  sixth generation  have got such a traditional recipe..

For Aaki Vaithal, we have to prepare 5 special dishes. In Aaki Vaithal, we are offering to Goddess 'Mariamman', her sister Goddess 'Pechiamman' and to Kaval Deivam 'Vairavasamy'.

All these dishes, have to be prepared without Sauteing , Roasting or Seasoning. All these are done to get blessings from Goddess. And my sister has sent me the photos of Aaki Vaithal at my ayamma's home.. Very happy to share those with you along with the recipes.. We have to prepare 5 dishes in total. Those follows..


Chicken Kuzhambu:

Ingredients:

Chicken with Bones  - 1/4 kg
Small Onion               - 8-10
Chopped Coconut       - 2 tbsp
Turmeric Powder          - 1/4 tsp
Salt                                - As required.
Oil                                  - 1 tbsp

To Grind:

Coriander Seeds          - 1/2 tsp
Red Chilli                    - 1
Pepper                          - 1/2 tsp
Cumin Seeds                - 1/2 tsp

Procedure:

  • Chop small onions. Grind everything under 'To Grind'.  Wash and chop chicken into bigger size pieces.
  • Take a cooker. Add chicken, chopped onions, ground masala, enough salt ,turmeric powder and oil to it. cook well for 5 whistles.
  • You shouldn't  saute or anything.

Karuppati Kozhukattai:

This is the very essential part in Aaki Vaithal..

Ingredients:

Paccharisi Maavu     - 1 kg   (Raw rice flour, Like Idiyappam Flour)
Karupatti                   - 1/4 kg

Procedure:

  • Add very very little water to karupatti and boil it in low flame till it reaches kambi patham. Add rice flour and mix it. Shape them like kozhukaati and steam it.

Panakkaram:


And a refreshing drink with karuppati (Palm Sugar)

Ingredients:

Tamarind         - 3 lemon size ball
Lemon             - 1
Karuppati        - 1/2 cup
Water              - As required ( I needed 4 cups of water)

Procedure:

  • Place everything in a clay pot. Mix everything together and filter it after some time. My Ayamma usually mix in the next day morning.

Brinjal -Dry Fish Kuzhambu:

Ingredients:

Brinjal                  - 1/4 kg
Drumstick            - 1
Pachai Dry Fish   - 2 (Dry Fish)
Ellu Punnaku       - few (Residue from Gingelly Oil Extraction Procedure)
Tamarind             - a lemon size ball
Turmeric Powder - 1/4 tsp
Salt                       - As required.
Oil                        - 1 tbsp


To Grind:

Small Onions       - 5
Tomato                 - 1
Kuzhambu Podi    - 1 tbsp

Procedure:

  • Chop Brinjal and Drumstick into bigger pieces. Grind everything under 'To grind'.
  • Take a cooker. Add chopped vegetables,  ground masala, Dry Fish ,Ellu Punnaku ,enough salt ,turmeric powder and oil to it. cook well for 2 whistles.
  • You shouldn't  saute or anything.
  • No need of seasoning.

And this Vellai Pongal topped with Vella Katti  is prepared specially for 'Bairavar'. This pongal should be prepared in clay pot.


Vellai Pongal with Vella Katti:

Ingredients:

Paccharisi       - 1 cup  (Raw rice)
Moong Dal     - 1/4 cup
Vella Katti      - 4
Water              - 4 cups

Procedure:

  • Wash and Soak rice and moong dal together for 30 minutes. Boil  water in pot. After the water boils, add soaked rice and moong dal. Cook till all the water has evaporated.
  • Take it in a laddle and serve it on Banana leaf. Top it with Vella Katti.
