Onion-Tomato thokku for neer dosai
This simple Onion-Tomato thokku serves as one of the best dishes for Neer Dosai.  You can prepare this thokku very easily too. The recipe follows..

Ingredients:


Big Onion                 - 1
Tomato                     - 1
Green Chili               - 1
Ginger-Garlic paste  - 1 tbsp
Salt                            - As required
Turmeric Powder      - a pinch
Chili Powder             - 1/4 tsp
Oil                             - 1 tbsp
Mustard seeds           - 1/4 tsp
Curry leaves              - few

Procedure:

  • Chop Big onion , Green chili and tomato finely.
  •  Heat oil in a pan. When its hot add mustard seeds and curry leaves.
  • When they splutter, add finely chopped onions and green chili.
  • After the onions turn translucent, add Ginger-garlic paste.
  • Saute till raw flavor goes off and after that add chopped tomatoes.
  • Add also salt, Turmeric powder and Chili powder. Cover with a lid and cook till both onions and tomatoes are cooked well together.Enjoy your spicy onion- tomato thokku.

Vazhaithandu Chutney

Vazhaithandu Chutney
Plantain stem is rich in potassium and hence it helps to improve immunity. It has Astringent quality which helps in blood clotting. It regulates pressure, controls diabetes and detoxifies body. It is one of the main foods to add to our diet.

Today's recipe is for those people, who are looking for alternative for Vazhaithandu kootu. This chutney will be very much spicy  and everyone will love it for sure. One of the best ways to include healthier vazhaithandu in a tastier way. Here you go!!

Recipe For :2

Preparation Time : 30 minutes

Ingredients:

 Chopped Vazhaithandu    - Around a cup (Plantain Stem)
Urad Dal                           - 2 tsp
Garlic Pods                       - 2
Dry Red Chili                   - 2
Salt                                    - As required
Tamarind                           - 1 tsp
Mustard Seeds                   - 1/2 tsp
Urad Dal                            - 1/2 tsp
Curry Leaves                     - few
Oil                                      - 1 tbsp

Procedure:


  • First comes cleaning procedure of vazhaithandu. Its quite easy. First chop vazhaithandu into thick round slices and while chopping it, you will see fibers in between the slices. Remove it using your fingers in circular motion.  Now place chopped and fiber removed plantain slices in a bowl of butter milk. Butter milk is used to prevent plantain from changing its color. You can also replace butter milk with little lemon juice added water.
  • Chop finely plantain slices and again add it to butter milk or lemon juice added water.
  • Now take few barbecue skewers. Wash and tie it at one end. Use this to remove some more fibers from chopped plantain stem. Just rotate in circular motion with the skewer bundle in the bowl. Fibers will stick to the bundle. Remove it. Repeat the above step for some more time, till all the fibers are removed. 
  • Heat oil in a pan.  Add urad dal, dry red chili and garlic pods to it.
  • After the dal turns golden brown, add chopped plantain stem. Saute for 7 to 10 minutes till plantain stem is cooked well. Add enough salt, tamarind and switch off the flame.
  • After everything is cooled down, grind it adding little water.
  • Heat a tsp of oil in a pan. Add mustard seeds, urad dal and curry leaves to it. When they splutter add it to chutney. Enjoy with Idli, Dosai or Chapathi of your choice.

It treats Indigestion and its a best worming medicine.  I have given the recipe for preparing a tasty chutney with Pirandai. I assure everyone will love this chutney for sure. It tastes so good with Chapathi, Roti or Dosai. A must given food to toddlers.. The recipe Follows..

Recipe For :2

Preparation Time : 20 minutes

Ingredients:


Pirandai             - 200 gm
Grated Coconut - 1/4 cup
Urad Dal            - 2 tsp
Dry Red Chili    - 3
Garlic Pods        - 2
Tamarind           - 1 tsp
Salt                    - As required

For Seasoning:


Mustard Seeds  - 1/4 tsp
Urad Dal           - 1/4 tsp
Curry Leaves    - few

Procedure:


  • Wash pirandai. Chop it into two. Take out inner flesh and seeds from it. After that chop it into little pieces. Only this is little time consuming process in the whole preparation. Always select pirandai which is young and tender. This is how pirandai looks like

  • Heat oil in a pan. Add urad dal and dry red chilies to it.
  • When they turn golden brown add garlic pods to it.
  • Saute for a minute and after that add chopped pirandai.
  • Cover with a lid and cook well pirandai. You can see it changes it color. It will turn little pale. It will take about 7 to 10 minutes for the pirandai to get cooked completely.
  • After pirandai has been cooked, switch off the flame and add tamarind. let it cool.
  • After it has cooled down completely, grind it along with coconut adding little salt and water.
  • Heat some more oil in the same pan. Add mustard seeds and urad dal to it.
  • When they splutter add curry leaves and add it to chutney.
  • Enjoy your chutney with Chapathi/Roti or Dosai.

Preparation Time : 15 minutes


Ingredients:


Garlic Pods        - 1/4 cup
Red Chili           - 3
Urad Dal            - 1 tsp
Tamarind           - 1 tsp
Salt                    - As required
Oil                     - 1 tsp

Procedure:

  • Heat oil in a pan. Add Urad Dal and Red chili to it,
  • When they turn golden brown add Garlic pods. Saute till its cooked.
  • After its cooked, Switch off the flame and add Tamarind. After it is cooled down, grind everything along with salt.
  • Enjoy your spicy chutney!!

Curry Leaves Chutney. We are using Big Onion and Tomato for preparing this chutney. Thus making it tastier.. Another tastier way of including healthy Curry Leaves.. And our previous post of Curry leaves kuzhambu is here Curry Leaves Kuzhambu.. Curry Leaves chutney recipe follows..

Preparation Time : 15 minutes


Ingredients:


Curry Leaves        - 3 handsful
Big Onion             -1
Tomato                 - 1
Garlic  Cloves       - 2
Urad Dal               - 2 tsp
Red Chillies           - 2
Tamarind               - Very Little
Salt                        - As required
Oil                          - 3 tsp

For Seasoning:

Oil                         - As required
Mustard Seeds      - 1 tsp
Urad Dal               - 1 tsp
Curry Leaves        - Few


Procedure:

  1. Wash curry leaves. Chop Big onion and Tomato. 
  2. Heat oil in a pan
  3. Add urad dal, red chillies and Garlic.
  4. After they turn golden brown, add chopped onions. Once it become translucent add chopped tomato.
  5. When both onions and tomatoes are cooked, add curry leaves.
  6. Saute for 2 minutes and then add salt and tamarind pulp.
  7. Switch off the flame. Once it gets cool down grind it. Do the seasoning and add it to the chutney.

Tamarind Thokku

Tamarind Thokku Weekend is over.. What for lunch tomorrow?? It would usually be a variety rice at our home for Monday lunch.  Today's recipe is one of the perfect side dishes for variety rice.  They used to prepare this in our college as a side dish for variety rice. Any RMKians remember this???

Preparation Time : 15 minutes


Ingredients:

Big Onion              - 1 
Tamarind               - a lemon size ball
Salt                        - As required
Turmeric Powder  - 1/4 tsp
Oil                         - 1 tbsp

To Dry Roast and Grind:

Dry Red Chili       - 2
Coriander Seeds   - 1 tsp
Cumin Seeds        - 1/2 tsp

Procedure:

  • Dry Roast and Grind everything under ' To Dry Roast And Grind'. Chop Big Onion finely. Extract tamarind juice from Tamarind. 
  • Heat oil in a pan. When the oil is hot add chopped onions.
  • Cover the pan with a lid and cook. Add salt and turmeric powder in between. 
  • When the onions are completely cooked add Tamarind extract.
  • Add also the ground powder. Cook in low flame till the thokku gets thickened. 
  • Switch off the flame and serve the thokku with variety rice . From my personal experience it tastes so good with Curd rice.

Gongura Chutney (Pulicha Keerai Chutney)

Gongura Chutney (Pulicha Keerai Chutney) Upcoming recipe is Andhra special, spicy Gongura chutney. Gongura leaves are sour in taste which gives natural sourness to this chutney.  Gongura leaves also helps to  relieve from in-digestion, cold and cough.Just prick the leaves alone from Gongura keerai and use it.

Recipe For : 1

Preparation Time: 15 minutes

Ingredients:

Gongura Leaves       - 2 handsful
Coriander Seeds       - 1/2 tsp
Cumin Seeds            - 1/2 tsp
Red Chilies               - 1
Fenugreek Seeds      - 1/4 tsp
Garlic Pods               - 2
Mustard Seeds          - 1/4 tsp
Urad Dal                   - 1/4 tsp
Asafoetida                - a pinch
Salt                           - As required
Oil                            - 2 tbsp

Procedure:

  • Heat oil in a pan. Add coriander seeds, cumin seeds, fenugreek seeds and red chilies. When they splutter add garlic pods. Saute for 2 minutes and take everything out in a plate. let it cool.
  • Add some more oil to the same pan. Add washed Gongura leaves to it. Saute till its cooked well. It will take only 3-5 minutes to cook completely. Switch off the flame and let it cool in the pan itself.
  • Take a Blender. First blend the things which we have taken in a plate earlier for a while. After that add cooked Gongura leaves and salt and blend everything well.
  • Season the chutney with Mustard seeds, Urad dal and Asafoetida.
  • Serve the chutney. It tastes so good with Chapathi..

Ingredients:


Garlic  Pods                 - 10
Chopped Coconut        - 1/4 cup
Tomato                         - 1
Red Chilli                      - 2
Oil                                 - As required

For Sesoning:


Mustard Seeds      - Few
Urad Dal               - Few
Curry Leaves        - Few


Procedure:

  1. Heat oil in a pan. Add garlic and red chillies..
  2. After they are roasted, add chopped tomato.. Saute till tomato gets cooked well.
  3. Switch off the flame and let it cool.
  4. Take a blender.. Grind coconut for a while and add the above mixture.
  5. Add salt ,enough water and grind it smooth.
  6. Do the seasoning and serve it..

Ingredients:

Tamarind                - small lemon size ball
Salt                         - 1/2 tsp
Sugar                      - a pinch
Big Onion              - 1 (small)
Green Chili            - 1

For Seasoning: 

Mustard Seeds      - 1/2 tsp
Cumin Seeds        - 1/2 tsp
Red Chili              - 1
Curry Leaves        - few
Oil                        - 2 tsp

Procedure:

  • Extract Tamarind juice from Tamarind. 
  • Finely chop Big onion and Green chili. Add it to the tamarind juice. Add also enough salt and sugar.
  • Do the seasoning and add it to the Tamarind juice.
  • Mix everything well. Add to Moong Dal kichadi and enjoy your Kichadi.

Having a toddler at home?? Upcoming is the recipe, which is 'the best' for toddlers. Vallarai Keerai thuvaiyal. A very healthy and tasty thuvaiyal. This keerai really helps in improving Memory Power and Concentration. 

This thuvaiyal is very easy to prepare. You can prepare it in less than 10 minutes. Its very tasty indeed. My picture for this recipe is the best example for this. As soon as i prepared this thuvaiyal, my kid started eating it And i took this picture after grabbing it from him. Yes!! Only this much is left out!!

How to use Vallarai Keerai?

Just prick out the leaves alone, Wash well and use it.

Recipe For : 1


Preparation Time : 10 minutes


Ingredients:

Vallarai Keerai leaves    - 2 handsful
Small Onion                    -2
Garlic pods                      - 2
Grated Coconut               - 2 tbsp
Red Chili                         - 1
Pepper                             - 3 to 6
Channa Dal                     - 1/4 tsp
Cumin Seeds                   - 1/4 tsp
Tamarind                         - very little
Jaggery                            - a pinch
Salt                                  - As required
Oil                                   - 2 tsp


Procedure:

  • Chop small onion and garlic to two. Adding Garlic gives nice flavor to thuvaiyal.
  • Heat oil in a pan. Add Cumin seeds, channa dal, pepper and red chili to it. Adjust the spice according to your taste.
  • When they splutter add onion and garlic.
  • Saute till they are cooked and take everything out in a plate.
  • Add washed keerai to the same pan and saute it,
  • After the keerai has been cooked, You can see the keerai changing color.  switch off the flame and add grated coconut and tamarind. Let everything cool.
  • Take a Blender. Add the things which we have taken already in a plate to it and blend for a while.
  • Now add cooked keerai , enough salt and jaggery to the blender and blend it coarsely. We are blending coarsely since we are making thuvaiyal out of it.
  • Add little water if required.
  • Enjoy your thuvaiyal with hot steaming rice and ghee. It also tastes good with Chapathi / Rice.

Mint Leaves                 -  1cup
Chopped Coconut       - 1/4 cup
Garlic  Cloves              - 2
Urad Dal                      - 2 tsp
Red Chillies                 - 2
Tamarind                     - Very Little
Salt                               - As required
Oil                                - 3 tsp


For Seasoning:

Oil                              - As required
Mustard Seeds          - 1 tsp
Urad Dal                    - 1 tsp
Curry Leaves             - Few


Procedure:

  1. Heat oil in a pan
  2. Add urad dal, red chillies and Garlic.
  3. Add washed mint leaves.
  4.  when mint leaves are cooked., add salt and tamarind pulp.
  5. Switch off the flame. Once it gets cool down grind it along with coconut. Do the seasoning and add it to the chutney
  6. Tastes good with Idli and Dosa.

Ingredients:


Toor Dal              - 1/4 cup (Thuvaram Parupu)
Channa Dal          - 1/4 cup (Kadalai Parupu)
Red Chillies         - 4
Garlic Cloves       - 2
Whole Pepper      - 1 tsp
Grated Coconut   -  2 tbsp
Asafoetida           - a pinch
Salt                      - As required
Oil                       - 1 tsp

Procedure:

  • Dry roast Toor Dal ,Channa Dal  and pepper in a medium flame. See to that its not burnt. Take it out in a plate and let it cool.
  • Dry roast grated coconut and add it to the roasted dal.
  • Heat oil to the pan. Add red chillies ,Garlic and asafoetida. Saute for a second and take it out.
  • Grind everything together with salt and very little water.
  • Serve it. You can also eat along with hot rice and little ghee or oil.

White Ellu                     - 1/2 cup (White Sesame Seeds)
Chopped Coconut        - 1/4 cup
Garlic Pods                   - 2
Red Chilli                      - 2
Urad Dal                       - 1 tbsp
Tamarind                      - little
Oil                                 - As required

For Sesoning:



Mustard Seeds      - Few
Urad Dal               - Few
Curry Leaves        - Few

Procedure:

  1. Heat oil in a pan. Add urad dal, garlic and red chillies..
  2. When they turn golden brown, add Ellu.. Cover the pan with a lid because the Ellu used to splutter. Saute it till the Ellu leaves aroma and changes it color.
  3. Switch off the flame and let it cool.
  4. Take a blender.. Grind coconut for a while and add the above mixture.
  5. Add salt ,enough water and grind it smooth.
  6. Do the seasoning and serve it..

Thinking, how this chutney will taste?? It tastes so good.. It tastes similar to that of peanut chutney.. Don't ever hesitate to try this chutney doubting of its taste.. it will be very much yummy.. Here is the recipe!!

Kollu (Horse Gram)      - 1/2 cup
Chopped Coconut        - 1/4 cup
Garlic Pods                   - 2
Red Chilli                      - 2
Urad Dal                       - 1 tbsp
Tamarind                      - little
Oil                                 - As required

For Sesoning:



Mustard Seeds      - Few
Urad Dal               - Few
Curry Leaves        - Few

Procedure:

  1. Heat oil in a pan. Add urad dal, garlic and red chillies..
  2. When they turn golden brown, add kollu.. Cover the pan with a lid because the horse gram used to splutter. Saute it till the kollu leaves aroma and changes it color.
  3. Switch off the flame and let it cool.
  4. Take a blender.. Grind coconut for a while and add the above mixture.
  5. Add salt ,enough water and grind it smooth.
  6. Do the seasoning and serve it..

Procedure:

  1. Heat oil in a pan
  2. Add urad dal, red chillies and Garlic.
  3. Add small onions
  4.  when onions are translucent., add salt and tamarind pulp.
  5. Switch off the flame. Once it gets cool down grind it along with coconut
  6. Do the seasoning and add it to the chutney.

Here is a very yummy Raw Mango Chutney.. This chutney's taste is very unique and you can have the satisfaction of eating a raw mango with chilli powder.. My teeth is tingling, when typing this itself..  It tastes soooo good.. Give this chutney a try, who and all have feel like me..

Ingredients:

Raw Mango          - 1 (medium size)
Chopped Coconut - 1/4 cup
Coriander Seeds   - 1 tsp  (malli)
Cumin Seeds        - 1 tsp  (seeragam)
Urad Dal               - 1 tsp
Red Chilly            - 1
Green Chilly         - 1
Garlic pods           - 2
Salt                       - As required
Oil                        - As required

For Seasoning:

Mustard Seeds     - 1 tsp
Urad Dal              - 1 tsp
Curry Leaves       - few


Procedure:

  • Grate raw mango..
  • Heat oil in a pan.. Add coriander seeds, cumin seeds, urad dal, red chilly, green chilly, garlic pods.
  • Saute for a minute and then add grated raw mango.
  • Saute it till the grated mango cooks well.. It took about 3 minutes for me..
  • Grind the above with coconut and salt.
  • Do the seasoning and add it to the chutney.. 
  • Your yummy chutney is ready!!

Carrot                   - 2 ( medium size)
Big Onion             -1
Tomato                 - 1
Garlic  Cloves       - 2
Urad Dal               - 2 tsp
Red Chillies          - 2
Tamarind               - Very Little
Salt                        - As required
Oil                         - 3 tsp

For Seasoning:

Oil                         - As required
Mustard Seeds      - 1 tsp
Urad Dal               - 1 tsp
Curry Leaves        - Few


Procedure:

  1. Heat oil in a pan
  2. Add urad dal, red chillies and Garlic.
  3. Add chopped onions. Once it become translucent add chopped carrots.
  4. After three minutes add chopped tomatoes.
  5. Add salt and tamarind pulp.
  6. Switch off the flame. Once it gets cool down grind it. Do the seasoning and add it to the chutney.
